“We took a road trip, travelling through the south western part of Spain, known as the ‘Estremedura’ or ‘Dahessa’. This is where the best jamón in the world is produced. The black Ibérico pig, native to the land, is a superior breed for charcuterie. Every time we saw these pigs, there was huge excitement. The little tapas bars are a real inspiration – an altogether different way of eating and experiencing the food culture.”
